Pantry Basics and Protein as Condiment

Instagram recipe #1, Canned tuna in tomato sauce – 4 servings

2 T olive oil

2 T butter

1/2 medium red onion – thinly sliced (julienne)

1 red pepper – thinly sliced (julienne)

2 garlic cloves, finely chopped

1/4 c red wine

1 large can whole peeled tomatoes (28 ounces)

6 nicoise olives – cut in quarters

1 T dried oregano

1 can of tuna

If desired:  artichoke hearts, red pepper flakes, salt and pepper to taste

2 T butter

1 pound of pasta, cooked

Instructions:

In a hot skillet add the olive oil and butter.  Once the butter is melted, add the red onion and red pepper, salt and pepper.  Sautee until both begin to soften, add the garlic and continue cooking for about one more minute.  Add the red wine and cook until it has mostly evaporated.  Add the can of tomatoes, olives, oregano, tuna and any items from the “If desired list”.  Reduce heat and simmer for about 15 minutes.  Add 2 T butter, allow to melt into the sauce.  Taste.  Adjust seasonsings.  Add in the cooked pasta, gently folding it all together and serve.
