Instagram #3, Frittata – 8 servings
Ingredients:
2 t olive oil
2 t butter
10 fingerling potatoes, thinly sliced
1/2 medium onion, thinly sliced
3 zucchini small to medium dice
3 c Kale, roughly chopped
1 dozen eggs
2 t https://www.penzeys.com granulated garlic
Salt and pepper to taste
1/4 c feta cheese, crumbled
Instructions:
Preheat oven to 350 degrees. In a hot oven-proof skillet add the olive oil and butter. Once the butter is melted, add the potatoes and onions. After the potatoes are slightly fork tender add the kale and arrange into a single layer over the potatoes and onions. Break the eggs into a bowl, add granulated garlic, salt and pepper, and whisk the eggs until scrambled. Slowly pour the eggs into the skillet. Top with the crumbled feta. Bake for approximately 20 minutes until firm in the middle and the frittata has pulled away from the sides of the pan.
